Wood pulp proofing baskets have been used in European bakeries for over 100 years; for good reason!

I offer two shapes of proofing basket, a round and an oval . My go-to size is an 875g oval, but hey, some prefer the round!

The oval basket is for loaves 750 – 1000g (875g sweet spot)
The round is for loaves 650 – 900g (750g sweet spot)
*I have had many bakers bake 500g loaves in both and love them!

These are the only basket I use in my baking.

These wood pulp proofing baskets are hand made in Germany, so slight fluctuations in color and size basket to basket are expected.

    I really like these oval pulp bannetons. I’ve been using the traditional woven type baskets until I heard a great review from Basil & Bloom. I thought I’d give these pulp baskets a try. Well, there’s no turning back for me. They do seem to remove more moisture from the dough resulting in higher oven spring and crispier crust.
    I made sure to follow the instructions for seasoning and conditioning the bannetons and have had no issue at all with sticking.
    I would highly recommend these pulp baskets and doing business with Rosehill sourdough.

    The round proofing basket is the perfect size for the two of us. I scaled a recipe down to get a 750 gram loaf that fits perfectly in this banneton. I rubbed some rice flour in a couple of times before first use and dusted it lightly before adding the dough. The flour I use allows me to hydrate at 80% and I have no problem with the dough sticking. I do kind of miss the circular pattern of flour I get from a rattan banneton but I love the size of loaf I get with this proofing basket.

    I am impressed with the quality of the materials that are used to make this banneton. Absolutely no other like it on the market.
    I was very pleased to receive it so quickly. I seasoned it right away (see video on u tube) and made a sourdough loaf. I am completely satisfied. Also, Mike is such a cutie pie, he does a step by step demo—super simple to follow. You need this beautiful basket!

    I waited awhile before I bought these because they are pricey and my other proofing baskets work so well. But I finally decided to get them when ordering my sling (which is amazing btw) because I figured would make sense shipping-wise… I am soooo disappointed with these… the dough consistently sticks even though I use rice flour to dust them… now I get that I might need to use more rice flour but I don’t really love the idea of having to use more rice flour with these than w my others… I’m pretty annoyed!
