I offer two shapes of proofing basket, a round and an oval . My go-to size is an 875g oval, but hey, some prefer the round!
The oval basket is for loaves 750 – 1000g (875g sweet spot)
The round is for loaves 650 – 900g (750g sweet spot)
*I have had many bakers bake 500g loaves in both and love them!
These are the only basket I use in my baking.
These wood pulp proofing baskets are hand made in Germany, so slight fluctuations in color and size basket to basket are expected.

After seeing two gardening influencers have positive, unpaid endorsements of these rhsd baskets, I decided to purchase 2 myself. And the results were an IMMEDIATE improvement compared to a traditional banneton. Not only are they incredibly easy to get the loaves out, but also yield a thin, cracker-like crust that is a delight to eat. Maintenance is easy too with just brushing out the excess flour (if any) and drying out in a cooling oven once you’re finished baking.
These are a MUST for anyone baking their own sourdough bread!

I am super happy with my bread mat and wood pulp bannetons. I looked at a lot of other bannetons before ordering and was dismayed at the dismal reviews. I have nothing but good things to say about these! Easy to use, easy to clean, bread dough doesn’t stick. And no wasted parchment with the bread mat. Could not be better! Except the price. Being in Canada, the exchange was high. And in addition to shipping, there was duty and fees to pay, so the price ended up being high. But i don’t regret my purchase!

These wood pulp bannetons work great! My bread crust is thin and crispy, and there’s absolutely no dough sticking when I invert the basket to remove the loaf. I make sure the banneton is coated well with rice flour before placing my dough, and the loaf slips out beautifully. The top of the loaf is set and easy to score.
Love the RHSD banneton and The BreadMat. I use them with every bake. So much better than the banneton and parchment paper I was using before.
