I offer two shapes of proofing basket, a round and an oval . My go-to size is an 875g oval, but hey, some prefer the round!
The oval basket is for loaves 750 – 1000g (875g sweet spot)
The round is for loaves 650 – 900g (750g sweet spot)
*I have had many bakers bake 500g loaves in both and love them!
These are the only basket I use in my baking.
These wood pulp proofing baskets are hand made in Germany, so slight fluctuations in color and size basket to basket are expected.

Love this banneton! it is so easy to maintain and keep clean, doesn’t give me the ick like the well seasoned lining on my other banneton, and the size is perfect for a pretty wide range of dough amounts. I also love the texture of the skin it leaves on the proofed dough, it is so dry and results in perfect loaves.

I’ve been a sourdough baker for 8 years now but started selling professionally at markets, within the last year. I am fairly new to making sourdough. I taught myself as a way to cope with the grief of losing my daughter. As a beginner I just used the basics to get started, things from Amazon, which at first did their job. Once I had the hang of making sourdough pretty successfully I thought that maybe I should just invest in some better quality tools. I purchased two bundles of the bread mats & wood pulp bannetons, complete game changer! The wood pulp bannetons made the surface of the dough so much easier to score and gave the loaves such a nice shape! The bread mats, now no more wasting parchment or reusing parchment. They are simply the best and give my loaves a nice evenly browned crispy bottom, no more uneven or burnt spots!
