This is the second time I’ve done scones with #sourdoughdiscard and it’s amazing how good they came out!

These are lemon blueberry almond and are 🤤🤤🤤

Preheat oven to 200C (400F)
275g all purpose flour
10g baking powder
2g baking soda
4g salt
Cut in
113g cold unsalted butter
In a separate bowl combine:
100g discard
150g maple syrup
50g of slivered almonds
75g blueberries
Zest of a lemon

Mix wet and dry ingredients and knead a bit to combine. Pat out to 7-8” diameter round

Cut into 8 pieces

Place on baking sheet and bake for 15 minutes

While baking make the glaze:
70g icing sugar
18g lemon juice
Zest of a lemon

Bake until golden, cool on a rack, then brush with glaze.
